THE PECAN COOKIE RECIPE
1 cup butter
1 cup vegetable oil
1 cup brown sugar
1 cup regular sugar
1 egg
2 tsps. vanilla
3 ½ cups flour
1 tsp. of soda
1 tsp. of salt
1 tsp. cream of tartar
1 cup of Old Fashioned Oats
1 Cup of Rice Krispies
If you are using chocolate chips : 1 12 oz bag of semi sweet chocolate chips
Pecans to taste.
Use a mixer and cream together the butter and oil. (just keep blending until it is sort of together) soften your butter
Gradually add sugars and beat till smooth. Add egg and vanilla.
Sift flour with salt, soda, and cream of tartar.
Slowly add to mixture of butter, eggs, oil, and sugars.
Then add oats, rice Krispies,
IF YOU ARE MAKING JUST PECAN COOKIES HERE IS WHAT YOU DO: ADD 1 CUP OF PECAN CHIPS AND AT LEAST 1 CUP OF CHOPPED PECANS. YOU CAN DO THIS TO YOUR TASTE. THEN THEY BECOME PECAN COOKIES. DROP BY SMALL COOKIE SCOOP ON A GREASED BAKING SHEET. I HAVE A CONVECTION OVEN AND I CAN DO THREE RACKS ON MULTI BAKE AT 370 FOR ABOUT 12 MIN OR SO. IF YOU DO NOT HAVE A MULT RACK FUCTION …. BAKE AT 375 UNTIL EDGES ARE BROWN AND LIKE YOU WANT.
IF YOU USE THE BASIC CHOCOLATE CHIP VERSION : THEN JUST USE TO TASTE.
LET THEM COOL ON PAN FOR A MINUTE OR TWO AND THEN MOVE TO RACKS.
